{Papa's Pumpkin Spice Bars}

Monday, March 01, 2010

My dad has always loved to bake. And he's incredibly good at it too. If you want to make a crowd pleasing dessert, this is it.

Bar Ingredients:
4 eggs (room temp)
2 cups of flour
1 can of pumpkin (15 oz)
2 cups sugar
1 cup canola oil
1/4 tsp nutmeg
2 tsp baking powder
1/4 tsp cinnamon
1/2 tsp salt
1/4 tsp cloves

Cream Cheese Frosting Ingredients:

3 oz cream cheese (room temp)
1/3 cup butter (room temp)
1 tsp vanilla
1 1/2 cups powdered sugar

Directions:
Cream eggs, pumpkin and oil. Add dry ingredients. Beat until smooth. Pour into a greased 11 x 15 metal pan. Bake for 25/30 minutes at 350° and let cool.

Combine cream cheese, butter, vanilla, and powdered sugar into a medium bowl. Mix well until smooth. Poor over bars and let frosting "set up" before covering with plastic wrap or foil. Cut into squares / bars as needed.
