{Homemade Potato Salad}

Nothing says summer like homemade potato salad! This recipe is the result of lots of hard work and experimenting done in the Loerke kitchen to combine several of our favorite family recipes. Enjoy!

1 lb small red potatoes
1 1/4 lb small purple potatoes (or you could just use 2 1/4 lb red)
1/2 cup mayo
1/2 cup light sour cream
1 Tbs horseradish mustard (we use Weber's and order it online)
1 Tbs cider vinegar
1 tsp finely ground Alderwood smoked salt (you can buy this in the bulk section at Whole Foods)
1/2 tsp freshly ground pepper
2 Tbs chopped fresh dill (divided)
2 hard boiled eggs
1/2 cup chopped celery

1. Boil potatoes in salted water for 20 minutes or until you can pierce their skins with a fork. Drain and let cool on a wooden cutting board or a flat surface for an additional 20 minutes.

2. While potatoes are cooling whisk mayo, sour cream, horseradish mustard, cider vinegar, salt, pepper, and 1 Tbs of dill in a medium bowl.

3. Next quarter potatoes and slice the eggs and celery into bite sized pieces and add to bowl.

4. Lastly, add remaining Tbs of chopped dill and stir until everything is well coated. Then refrigerate at least 4 hours before serving.

Sounds like a great recipe...thanks! One tip...if you add the dressing when the potatoes are still warm, they will soak up more of it...the flavor will get inside. Also, try adding some smoked paprika (pimenton) as an alternative, if you don't have the smoked salt....or try a little of both...adjusting salt as desired. Just a thought...looking forward to trying it! :)

I've been working my way from your most recent post back to the March 2010 series and saw this. I made it a few days ago because I happened to have most of the ingredients at our place and I was trying to use them up. It is literally the BEST potato salad I've ever had. I love it so much more than how it was done growing up. Thanks for sharing. It's a new favorite and your blog has skyrocketed to my top 3 since I found it about a month ago!
