{Applesauce Spice Cake}

There are two things you need to know about this cake 1) it's my favorite family Fall recipe and 2) it weighs 148lbs, so don't drop it on your toes.

Cake Ingredients:
1 Jar (24 oz) Applesauce (preferably Musselman's)
1/2 Cup Butter, softened
2 Eggs
2 Cups Sugar
3 Cups all purpose flour
2 tsp Baking Soda
2 tsp Cinnamon
1/2 tsp Nutmeg
1/2 tsp Cloves
1/2 tsp Allspice

Caramel Icing Ingredients:
3/4 Cup Butter
1 1/2 Cups packed Brown Sugar
8 Tbs Evaporated Milk
1 1/2 Cups Powdered Sugar (sifted)

Cake Directions:
1. In a medium bowl (or using your stand mixer) beat together the butter, sugar, and eggs until fluffy.
2. In another medium bowl sift together flour, baking soda, cinnamon, nutmeg, cloves, and allspice.
3. Add applesauce and sifted flour mixture to the egg mixture. Beat on medium speed for 2 minutes.
4. Pour into greased 13" x 9" x 2" baking pan. Bake at 350° for 50 minutes. Cool in pan.

Caramel Icing Directions:
1. Once cake has completely cooled place the butter and brown sugar in a medium saucepan on the stove. Heat and stir until boiling. Boil for 2 minutes, stirring constantly.
2. Stir in evaporated milk and let cool until warm to the touch.
3. Then stir in the sifted powdered sugar 1/2 cup at a time. Spread over cake, let cool, and devour!

OMG! Just made this and made muffins instead of a whole cake and the batter was divine!!! Haven't even gotten the frosting on and want to eat all of the muffins already! And it made my house smell like fall!

I made this cake and it turned out wonderfully! I used homemade applesauce that I added a little sugar to. Just be sure to add salt (about a teaspoon) to the batter if you are using unsalted butter. I think I added 3/4 tsp vanilla too. This recipe made 3 6-inch layers and 12 cupcakes. It's also really good with maple cream cheese icing!
