{Pumpkin Waffles}

Wondering what to do with that extra can of pumpkin from Thanksgiving? Make these waffles! I dare you. They'll make you wish you were bathing in waffle batter with a gigantic syrup loofah.

1 Cup Milk
1 Egg (separated)
1/2 Cup Pumpkin Puree
1/2 tsp Vanilla Extract
3 TBS Canola Oil
2 TBS Brown Sugar
1 1/4 Cup Flour
2 tsp Baking Powder
1/4 tsp Salt
1/2 tsp Cinnamon
1/8 tsp Nutmeg

1. In a large bowl whisk together milk, egg yolk, pumpkin, vanilla, oil, and brown sugar.
2. In a small bowl beat egg white with a hand-held mixer until stiff peaks form, then set aside.
3. Add the flour, baking powder, salt, cinnamon, and nutmeg to the pumpkin mixture, stirring just until combined. Fold in 'yo egg whites.
4. Turn on waffle iron and spray with Pam once it's hot. Scoop approx 1/2 cup of batter and cook until golden brown.
5. Serve with butter and lots of syrup. After all, Elf's four favorite food groups were candy, candy canes, candy corns, and SYRUP!
