{Happy National Popcorn Day!}

Thursday, January 19, 2012

The average American eats 68 quarts of popcorn a year. SIXTY EIGHT! Tim and I are not big popcorn eaters, but we're grateful this day gave us an excuse to make homemade Cinnamon Caramel Corn with Pecans & White Chocolate. Talk about delicious!

What's your favorite flavor of popcorn?

As a girl who grew up having popcorn for dinner on Sunday nights you could say I have some history with the stuff. Trader Joe's olive oil and hint of salt & the Alton Brown make your own microwave popcorn are my current favorites. But when it comes to flavors, Topsy's cheese, caramel, and cinnamon combo buckets are delightful! And then something I will stop the car and turn it around for is Karamel Korn - normally only sold in cities like Gattlinburg, TN these days, but they used to be a staple in the malls when I was growing up in Indiana. I miss that stuff so much.

My husband introduced his way of eating popcorn and now I'm hooked! Start with a saucepan on the stove. I put about 2 handfuls of mini marshmallows in and cook on low. I stir continuously until it becomes a liquid. Pop a bag of popcorn in the microwave. Drizzle the marshmallows over the popcorn in a bowl. Enjoy pure AWESOMENESS!!!

Have you stumbled upon Popcorn Indiana Kettlecorn. The regular is amazing, but the chocolate drizzled will change your life. NO JOKING. My husband and I may or may not have hoovered an entire bag in one sitting. No judgement.
