Popeye says, "Three fist pumps for spinach!" This salad takes about 5 minutes to make and will have most veggie fearing individuals asking for seconds. Trust me, you're gonna love it.
Pine Nuts (toasted)
Dried Cranberries (we use Craisins)
Brianna's Poppy Seed Dressing (the bottle with the peach on it)
1. Toast a hand full of pine nuts on medium heat in a small skillet. Remove from heat once they start turning golden brown. Pour into a small bowl and set aside.
2. Wash and rinse spinach and place in a medium bowl.
3. Sprinkle a handful of Craisins, toasted pine nuts, and enough poppy seed dressing to your liking. Toss and serve!
