{Cinnamon & Nutmeg Banana Ice Cream}

Best Whole30 dessert I've eaten yet. PERIOD. One things for sure, this recipe won't be requiring Randy to show Mommy how the little piggies eat.

Ingredients:

Frozen Bananas (approx 1 cup)
Coconut Milk (approx 1/2 cup)
Cinnamon & Nutmeg to taste

Directions:
Place above ingredients in a blender and blend until well combined. If ice cream is too thick add a little more coconut milk. Then feed the face 'yo mama gave you!

SO GOOD. I need to get some coconut milk action in mine ASAP. My husband teases me these days for putting cinnamon on EVERYTHING and it's probably banana ice cream's fault.

My new husband and I have been doing the Whole30 with you and this just SAVED MY DAY. I have such a sweet tooth (LOVE sour patch kids myself), and this recipe was truly delicious.

Sounds delicious! I use frozen bananas a lot for smoothies and sweetening other baked goods, and a friend taught me a trick that may seem obvious to most people but I had never thought up... Peel your bananas and put them in a ziplock to store in freezer. Nothing like trying to peel frozen bananas!

YES. I've been doing this since day 5. Once I added coffee after it chilled in the freezer...delicious. I've added walnuts and cacao nibs too. All great variations of this tasty treat! This diet it easy once you know some tricks...

I'm in Kauai right now and I made this with apple bananas tonight for dessert. Holy ice-cream tastealike, Batman! Thank you for sharing. I won't miss the sugary shave ice with a treat like this!

so, how many bananas is 1 cup? I just threw one banana in and it was like a banana drink. Good, but not icecream. How many have you been using?

anony, keep adding naners until it's thick (almost like a malt). may be 1 1/2 - 2 cups dep on the coconut milk you use.

This was delicious. In addition to peeling the bananas before you freeze them, i find the it also helps to slice them. My old blender has a hard time blending a whole frozen banana.

Thank you, thank you, thank you. On day 7 of whole 30 and just found this.... I've made a slight variation - mango ice-cream... Hope it freezes ok, I'll know tomorrow :)

Did any of your read "It Starts With Food" or the guidelines to Whole30? It very clearly says not to "paleo-fy" any desserts. That means this ice cream is not Whole30 compliant.

What I did made it even creamier!
Put a can of coconut milk in the refrigerator over night. When you get ready to make the ice cream, pull out the can of coconut milk and open it upside down. Pour off the watery liquid on top, and what should be left at the bottom of the can is about 1/2 cup coconut cream! Use that as your coconut milk and you have quite a creamy treat!
*note - this only works with full fat coconut milk.

These came out great, made them for friends on the Whole30.

My food processor wasn't able to pulverize the frozen bananas very well, I think next time I'll try freezing the coconut milk as ice cubes and leave the bananas at room temp.

Love it!
